Sweet Potato Cobbler, Best Old Fashioned Southern Cooks MASTER COOKBOOK RECIPE #480 SWEET POTATO COBBLER Ingredients: 4-5 medium/large, sweet potatoes, peel and chop into 1/4-inch slices. 2 cups water 1/2 cup whole milk 1/2 cup canned or whipping cream 1/4 tsp salt 1 cup granulated sugar 1/2 cup light brown sugar 1/4 cup salted butter 1/4 tsp ground cinnamon 1 tsp vanilla extract Instructions: Boil potatoes in water and cream for 12 minutes, then add salt, sugar, butter, and cinnamon. Cover and cook on low to medium heat for 5 minutes until the sugar dissolves. Remove from heat, stir in vanilla, and transfer to a greased round baking dish. Prepare Cobbler Biscuit Topping (Recipe #466, see below), roll it out, and place it over the filling. Cut slits into the dough and top with butter. Bake at 350°F for 40 minutes or until golden brown. If Recipe #162, dumplings are added to a cobbler, water must be added to provide enough juice for dumplings to cook in. Use a fork to blend until the butter is pea sized. Add milk and mix until all the flour is incorporated into the dough. Place the dough on a floured surface and knead it 4-5 times. Roll out to 1/4 inch thick.
