The root cellar was nearly empty. The garden hadn't given yet. And somehow — somehow — they still fed everyone. This is what they made during the Hungry Gap.Today I'm pulling from the old ways to show you the forgotten pantry meals that carried families through early spring — when provisions were low, foraging had just begun, and resourcefulness wasn't a trend, it was survival. We're making a slow-simmered bean and salt pork soup, a skillet of cornbread from what was left in the larder. These aren't recipes that need a full pantry. Here is the Great Depression cookbook i used, buy thr used one! https://amzn.to/4dUVeR7 Recipes from todays video: Potato & Onion Soup with Dumplings Ingredients: 8 potatoes, diced Water (use as little as possible) 1 quart milk Salt and pepper, to taste Dill (optional) Dumplings: 3 tablespoons flour (or enough to make a drop batter) 1 teaspoon baking powder 1 egg Pinch of salt Instructions: Boil diced potatoes in a small amount of water until soft. Lightly mash with a beater, leaving some chunky pieces. Add milk, salt, pepper, and dill if using. In a small bowl, mix dumpling ingredients into a soft batter. Drop dumplings by teaspoon (half full) into the soup using a butter knife dipped in the milk. Cover tightly and simmer for 10 minutes, until dumplings are cooked through. 🫘 Bean Soup with Ham or Salted Pork Ingredients: 2 cups dry navy beans 2 quarts water Ham bone, ham hocks, or salted pork Pepper, to taste Onion, chopped Shredded carrot (optional) Celery (optional) Bay leaves or other seasonings 1 cup cream (optional, for serving) Instructions: Wash beans and bring to a boil in water. Turn off heat and let sit 1 hour (or soak overnight in water 8–12 hours). Drain and rinse beans. Return to pot and add fresh water, ham bone or meat, pepper, onion, carrot, celery, and bay leaves. Simmer gently all day until beans are tender. Add cream before serving if desired. Do not add salt (the meat provides enough). 🌽 Cornmeal Mush Ingredients: 1 cup cornmeal 4 cups water 1 teaspoon salt Instructions: Mix cornmeal with water and bring to a boil. Add salt and cook gently for at least 30 minutes, stirring often. Serve warm with milk, half & half, sugar, or syrup. To Use Leftovers: Pour into a bread pan and let cool in the pantry. Slice, dip in flour, and fry in fat until crisp. 🍳 Johnnycake (Cornmeal Bread) Ingredients: 2 tablespoons fat (butter or drippings) 2 eggs, well beaten 1 teaspoon salt 2 cups sour milk or buttermilk 2 cups cornmeal 1 teaspoon baking soda Instructions: Melt fat and mix in eggs and salt. Stir in sour milk or buttermilk. Add cornmeal and baking soda, mixing well. Pour into a greased pan. Bake at 400°F for 20–25 minutes.
