If using fresh or pre-cooked udon, separate the noodles in hot water, then drain. Whisk 4 eggs with salt. Add milk and whisk again. Drizzle a little oil into the pan, pour in the eggs, and cook a simple omelet. Break it into pieces and set aside. Slice the garlic and leeks. Cut the carrot into matchsticks, dice the tomatoes, and slice the bell pepper. Slice the green onions for serving. Add the garlic, leeks, carrot, tomatoes, and bell pepper to a large pan. Drizzle with a little oil and cook for a few minutes, until the vegetables begin to soften. Add the shrimp and cook until pink. Stir in the tomato sauce or tomato paste.
