Shrimp Udon Stir-Fry with Egg and Vegetables | Easy Udon Noodles Recipe
This shrimp udon stir-fry is one of those easy dinners that works really well for a family of four. It has thick udon noodles, juicy shrimp, colorful vegetables, a little tomato sauce, and fluffy omelet pieces. I like this recipe when I want something warm, filling, and homemade, but not too complicated. The vegetables cook quickly, the shrimp only need a few minutes, and the udon noodles make the whole dish satisfying without a heavy sauce. Serve hot with green onions and sesame seeds on top. Serves: 4 Ingredients For the omelet: 4 eggs100–150 ml / about 1/2 cup milk Salt, to taste A little vegetable oil For the udon stir-fry: 4 small packs fresh or pre-cooked udon noodles, about 600–800 g total 300–400 g / 10–14 oz peeled shrimp 4 garlic cloves 2 small leeks 1 carrot 2 tomatoes 1 bell pepper A small bunch of green onions 80–100 g / about 1/3 cup tomato sauce or passata A little vegetable oil Salt, to taste Black pepper, to taste To serve: Green onions Sesame seeds Recipe Prepare the udon noodles according to the package instructions. If using fresh or pre-cooked udon, separate the noodles in hot water, then drain. Whisk 4 eggs with salt. Add milk and whisk again. Drizzle a little oil into the pan, pour in the eggs, and cook a simple omelet. Break it into pieces and set aside. Slice the garlic and leeks. Cut the carrot into matchsticks, dice the tomatoes, and slice the bell pepper. Slice the green onions for serving. Add the garlic, leeks, carrot, tomatoes, and bell pepper to a large pan. Drizzle with a little oil and cook for a few minutes, until the vegetables begin to soften. Add the shrimp and cook until pink. Stir in the tomato sauce or tomato paste. Add the udon noodles and toss everything together. Add the omelet pieces, season with salt and black pepper to taste, and mix gently. Serve hot with green onions and sesame seeds. Tips Do not overcook the shrimp. They only need a few minutes. Loosen fresh or pre-cooked udon noodles in hot water before adding them to the pan. Cut all vegetables before you start cooking, because the stir-fry comes together quickly. Use a large pan so the noodles are easy to toss. Add the tomato sauce while the vegetables are cooking, before adding the noodles. Add green onions only at the end, when serving.
