InterContinental New Taipei Hot Spring We spent a quiet weekend night at the newly opened, understated InterContinental New Taipei Hot Spring Hotel in Jinshan. From the moment we parked in the basement and took the elevator up, we were captivated by the hotel’s refined aesthetic. Its understated Japanese-inspired design instantly resonated with my family. The room was the true showstopper. Our Deluxe Double Room spanned 51 m² and offered a peaceful mountain view framed by large windows. To our delight, the room featured a private in-room hot spring bath, spacious enough for two. The spring water ran wonderfully hot—so much so that we had to add a bit of cold water to temper it. Amenities were by Byredo, beautifully scented and absolutely adored by my mom. Breakfast the next morning was served at Shima, a bright, high-ceilinged space whose bar design draws inspiration from local squid-fishing boats, subtly echoing the look of traditional Japanese lanterns. The menu thoughtfully incorporates local flavors and ingredients, including the iconic Shiba Wang rice dumplings, Jinshan King buns, and taro balls—a lovely tribute to the region. Though our stay was brief, it left a lasting impression.
