A Short Documentary based on Wilber's BBQ, Pit master Jackie Martin and their dedication to the art of Whole Hog BBQ. In eastern North Carolina, it was developed into a technique for roasting a whole pig on an open pit of hardwood (hickory or oak) coals, and flavoring the meat with a sauce made of vinegar and various spices (mainly peppers). This technique became known as the "Eastern North Carolina Style" of pork barbecuing. The art of whole hog bbq has been passed down from pit master to pit master, generation to generation.
