Beans are rich in nutrients and very caloric: they are rich in vitamins A, B, C and E and mineral salts such as potassium, iron, calcium, zinc and phosphorus and rich in fiber. The sowing period of beans is between April and May and the harvest takes place only once the pod has completely taken on color, from green to red/white, yellow, pink etc.. that is generally after 3-4 months from sowing. The maturation time depends a lot on the type of bean plant which can be dwarf, earlier, or climbing, but is more productive. I bought dwarf borlotti beans at the farm, they are a variety of the common bean, Phaseolus vulgaris, originally grown in Colombia where it is known as cargamanto. This bean is also known as cranberry bean or Roman bean. Very good for many recipes, intense flavor suitable for soups, broths and purees.
