Japanese pickles in 3 ways- How to make Nuka pickles, Sagohachi zuke and Bettara zuke

We harvested Mini Mac Daikon Radish from our micro farm in September and I made 3 different types of Japanese pickles at home. Nuka zuke is one of the most traditional Japanese pickles (I'll upload how to start Nuka-doko, Nuka bed, video next week) I fermented KOJI to make Sagohachi-zuke and Bettara-zuke.
