Ingredients 700g chicken giblets Washed, cut and soaked in water with 2 tbs vinegar For the fry 2 medium onions, sliced - 1 for braising and 1 for garnish 1/4 cup oil 3 dried chillies a few sprigs of fresh thyme 10-12 curry leaves 2 green chillies 2 pieces of cinnamon stick 1 tsp crushed ginger garlic 1 tsp rough salt grind of fresh black pepper 1 tsp lemon juice 1 tsp worcestshire sauce To garnish 1 tsp chicken spice spring onion and dhania Serve straight from the pan with some fresh bread and if you have it, some extra chillie oil for those who enjoy that extra bit of spice!
