Lutefisk is a traditional Scandinavian dish made from dried whitefish (usually cod) that’s been rehydrated in a lye solution, then soaked in water to remove the lye. The process gives it a distinctive gelatinous texture and mild flavor. It’s particularly popular during Christmas celebrations in Norway, Sweden, and among Scandinavian communities in the Upper Midwest of the United States. The dish is often served with butter, cream sauce, potatoes, and peas, and has a reputation for being an acquired taste and has pungent smell that divides even those within Nordic cultures.
