Ingredients- 2 Tbsp (40ml) - Olive Oil 2 - Brown Onions, Diced 6 - Garlic Cloves, Diced or Minced 1 - Stalk of Celery, Diced 3 - Small Carrots, Diced 6g - Oregano, Chopped 3 - Sprigs Rosemary Leaves Only, Chopped 4 - Sprigs of Thyme, Leaves Only, Chopped 10g - Basil, Chopped 230g - Sun-Dried Tomatoes, Roughly Chopped (Optional) 8 Rashers (220g) - Streaky Bacon 500g - Beef Mince 500g - Pork Mince 300ml - Red Wine (Can be substituted for Beef, Chicken or Vegetable Stock) 1.2kg (2.6Lb) - Tinned Diced Tomatoes 2 Cups - Parmesan Cheese, Freshly Grated 350g - Lasagne Sheets See Note Below Bechamel Sauce - 900ml - Full Fat Milk 90g - Unsalted Butter 90g - Plain Flour (All Purpose) 1/2 - Brown Onion 2 - Dried or Fresh Bay Leaves 3 - Cloves 1/2 Cup - Parmesan Cheese, Freshly Grated Notes - I used instant lasagne sheets in this recipe, which means they don’t need to be pre cooked. If you are using Lasagne sheets that do need to be cooked, bring a pot of water to a boil and add in 1 Tbsp (15ml) Olive Oil. Place the pasta sheets into the water and cook per packet instructions, usually around 8-10 minutes, moving them around frequently to avoid them sticking. If you are using fresh sheets, follow the recipe as I did in the video.
