Matbucha
A traditional and very popular Moroccan dish Ingredients: 3 tbsp olive oil/vegetable oil 2 minced garlic cloves 1 chopped green chili pepper 5 chopped ripe Peeled tomatoes 1 red bell pepper thinly sliced 1 tsp paprika + 1 tsp paprika 1/2 tsp cumin 1/2 tsp turmeric Salt Directions: Heat the oil in a pot. add the chopped green chili pepper and the minced garlic cloves. season with 1 tsp of paprika.add the red bell pepper, Cook for 2 minutes, stirring occasionally. add the chopped tomatoes. Add the tomatoes, season with paprika, cumin, turmeric, salt and black pepper. mix, cover and let it cook for 1 hour on low heat. after 1 hour remove the lid from the pot, and let it cook until the most of the liquid has evaporated.
