Today, for our Tuesday appointment, we're preparing a crazy quick lunch: my famous Zucchini Meatballs, a recipe I already shared in 2020 and that we're remaking today live, even tastier, quicker, and with the gooey center trick! If you're looking for an idea for a vegetarian main course or a delicious side dish with fresh zucchini, these pan-fried or air-fried meatballs are the summer's game-changer. Take notes, here's today's super easy recipe: Ingredients • 3 fresh zucchini • 1 finely chopped onion • 1 egg • 2 generous tablespoons grated Parmesan cheese • Breadcrumbs to taste 2 generous tablespoons • Herbs: Lemon zest, fresh mint, and basil • Stringy center: Diced provola cheese, if desired • Salt and oil for cooking How to make zucchini meatballs (The trick to keeping them from falling apart) 1. The secret of water: Grate the zucchini, add the chopped onion, a pinch of salt, and let sit for 10 minutes to release all the water. 2. Squeeze the zucchini well with your hands or in a kitchen towel. 3. In a bowl, combine the squeezed zucchini, lemon zest, chopped mint and basil, egg, Parmesan, and enough breadcrumbs to compact the mixture. 4. Shape our meatballs by placing a cube of provola cheese in the center. 5. Quick cooking: Cook them in a pan with a drizzle of oil or in the air fryer for a super light and crispy version!
