Congrí Cubano / Moros y Cristianos

Congrí (made with red kidney beans) or Moros y Cristianos (made with black beans). This is a very popular dish in Cuba and is often eaten both as part of the daily diet and on special occasions such as birthdays, Christmas, and New Year's. We can also find it on fast food menus at small street stalls, and it's also a staple in most restaurants on the island. Preparing it is very simple; you just need to follow a few basic tips to get it perfect, such as not letting the beans get too soft and never adding water instead of broth, which would affect both the flavor and color. The ingredients we need for 4 servings are: • 1/2 cup of beans • 1 cup of rice • 1/2 red onion • 1/2 green bell pepper • 6 garlic cloves • 1 teaspoon of cumin • 1 teaspoon of oregano • 1 bay leaf • 2 tablespoons of lard or oil (I don't recommend olive oil) • Pork patties, empellas, or bacon, approximately 1 cup • Salt to taste These ingredients can easily be doubled to make more rice. Keep in mind that the serving size will also depend on how many dishes are available and how greedy your guests are :) If you want to prepare this dish in a pressure cooker or rice cooker, you'll need the same ingredients except the broth ratio will be 1 to 1, meaning one cup of broth for every cup of rice. I also like to add 1/2 cup of extra broth. That means if you're making 2 cups of rice, you'll need to add 2 1/2 cups of broth.
