We traveled to Jaén, the world capital of olive oil and the Spanish capital of erosion. I was able to accompany Francisco Javier Pulpillo and Juan Manuel Miguel, from the Iberian Society for the Study and Conservation of Ecosystems (SIECE), to learn about the extraordinary work they have been doing for decades to conserve Jaén's natural heritage.
