Foxtail Millet Tomato Rice Recipe: Tomato Foxtail Millet: Thinai (Foxtail Millet) - 1 Cup Water - 4 Cups Oil - 1 tbsp Mustard Seeds - ½ tsp Urad Dal - 1 tsp Chana Dal - 1 tsp Cashews - 5 nos Onion - 1 no Green Chilli - 1 no Tomato - 3 nos Salt - To Taste Red Chilli Powder - 1 tsp Coriander Powder - 2 tsp Garam Masala Powder - ½ tsp Coriander Leaves -1 tbsp Cooking Instructions: 1. Wash the Foxtail millets and keep aside. 2. Puree 3 tomatoes in a mixer grinder. 3. Heat a pressure cooker, add 1 tbsp of oil, mustard seeds, urad dal, chana dal and let the mustard seeds splutter. Add 5 cashew pieces and roast until golden brown. 4. Add thinly sliced onions, chopped green chilli and cook until the onions are translucent. 5. Add the tomato puree and continue to cook. 6. Add the red chilli powder, coriander powder, garam masala powder, salt and chopped coriander leaves. Saute this for a minute. 7. Add the washed Fox Tail millet and 4 cups of water. 8. Pressure cook this for 4 whistles and let the pressure settle down on its own. 9. Remove from the pressure cooker, garnish with coriander leaves and serve hot with raita.
