日式轻乳酪蛋糕 超详细教程 小白也能轻松掌握!Japanese Cotton Cheesecake Recipe

本期视频跟大家分享口感轻盈绵密,带有淡淡芝士香气的日式轻乳酪蛋糕。制作轻乳酪蛋糕我们会用到水浴法,水浴法不仅能够避免蛋糕在烤箱中开裂,也能够让蛋糕更加湿润,同时由于蛋糕底部是坐在水中的,所以也可以控制蛋糕的底部温度不会过高,进一步避免它开裂。这个蛋糕的乳酪糊质地是很稀的,而蛋白霜又是达到比较偏软的湿性发泡状态,所以在混合两者的时候,一定要注意手法要轻盈,用翻拌的方式,并且使用刮刀,来最大程度避免面糊消泡,同时保证乳酪糊和蛋白霜充分拌匀,否则蛋糕就会因为消泡而出现布丁层,或者因为面糊没有搅拌均匀,乳酪糊沉淀到底部形成硬底。 🔔欢迎订阅我的频道Subscribe to my channel: http://bit.ly/2GNUdtz?sub_confirmation=1 食谱(可制作一个6寸圆模蛋糕) 奶油奶酪 120g 细砂糖 45g(不喜甜可减到40g) 低筋面粉 20g 玉米淀粉 10g(没有可用等量低筋面粉代替) 牛奶 80g 鸡蛋3个(平均每个带壳60g,不宜过大或过小) 无盐黄油 30g 柠檬汁 4g(没有可替换等量白醋) 模具:6寸固底圆模,如果用活底模具需要在模具外包3层锡纸防止进水。也可以用轻乳酪蛋糕的椭圆模具烤。 烤制: 水浴法,上下火130°C/270°F烤60分钟,最后转为150°C/300°F,直到上色(时间不定,需在烤箱旁盯着)。 8寸配方,可将所有材料乘以1.67(鸡蛋为5个)。上下火130°C/270°F烤65-70分钟,最后转为150°C/300°F直到上色。 Recipe(makes one 6 inch cake) Cream Cheese 120g Granulated Sugar 45g( use 40g if you prefer it less sweet) cake flour 20g corn starch 10g Milk 80g 3 Large eggs(about 60g each with shell) Unsalted Butter 30g Lemon Juice 4g Cake Pan: 6 inch round pan with fixed bottom. If using removable bottom, wrap the pan with 3 layers of aluminum foil to prevent water from coming in. Bake: Bake in a water bath at 130°C/270°F for 60 minutes, then turn to 150°C/300°F until the top turns golden. The baking time may vary for the second part so you need to watch the cake and take it out once it gets the color on. To make an 8 inch cake, multiply every ingredient with 1.67(use 5 eggs).
