​Spaghetti alle Vongole: La Ricetta Originale di "Noi a Capri"

Welcome to Us in Capri! I'm Gaetano, and today I'm taking you to the Punta Carena lighthouse (Anacapri) to prepare a great traditional classic: spaghetti with clams. A simple recipe, with just a few genuine ingredients, but with incredible flavor. Follow the steps with me for a dish fit for a true chef! Ingredients for 4 people 320 g spaghetti (recommended: bronze-drawn triangular spaghetti) 1 kg fresh clams 2 cloves garlic Extra virgin olive oil (EVOO) to taste Salt to taste 4 sprigs fresh parsley 2 chili peppers Method Preparing the base: In a large pan, heat the EVOO with the chopped garlic and whole chili pepper. Let the garlic brown slightly. Cooking the clams: Add the fresh clams, cover with a lid, and wait for them to open naturally. Add a handful of parsley and cook for another minute. Cooking the pasta: Bring the water to a boil, lightly salt it (remember, the mussel liquid is already salty!), and add the spaghetti. Drain 3 minutes before the cooking time indicated on the package. Cleaning: While the pasta is cooking, transfer the clams to another pan, remove the shells (reserving a few for garnish), and discard the chili pepper. Set aside the flavorful sauce. Stirring: Transfer the pasta directly to the pan with the sauce, add more fresh parsley and a ladle of the cooking water. Toss everything vigorously: the goal is to create a perfect emulsion between the cooking water and the oil, transforming it into a delicious creamy sauce. Plating: When the spaghetti is perfectly al dente and creamy, turn off the heat and immediately proceed to plating. ​Gaetano's secrets for perfect spaghetti: ​The creamy sauce trick: The secret is not adding fat, but creating a perfect emulsion between the cooking water (rich in starch) and the cooking juices of the shellfish. If it doesn't become creamy, the trick is to toss the pasta vigorously with a ladle of cooking water: that's where the magic happens! ​The culinary debate: I love the spicy touch of chili pepper, but I know purists are divided.
