Lamb. 3un. Bay leaves. 4 tbsp. Smoked sweet pepper. 4 tbsp. Salt. 2 tbsp. Black pepper. 1 tbsp. Cumin. 4 tbsp. Rosemary. 5un Chopped garlic clove. Q.b. Olive oil. 8un. Chopped carrots. 2un. Chopped onions. 2 tbsp. Black peppercorns. 750ml. Red wine. (For the potato) 4kg. Potatoes. 2 tbsp. Salt. 2 tbsp. Smoked sweet pepper. Q.b. Ground black pepper. Q.b. Olive Oil. (For sausage rice) 2un. Chopped medium onion. 3un. Chopped garlic clove. 1un. Meat sausage “Monchique”. 1un. Meat black pudding. Q.b. Salt. Q.b. Ground black pepper. 1kg. Basmati rice. 2L. Water. Method: For the lamb, make a mixture with the spices and oil. Spread the lamb completely with a mixture of spices. On a tray, place a drizzle of olive oil, such as onions and carrots, cut into pieces and add the black peppercorns. Put the lamb on top of the vegetables and add the red wine. Cover the tab with aluminum foil and place it in the oven for 1h30m to 2h., Then uncover and turn the lamb and take it to the oven between 30 and 45m. For the potatoes, on a tray, add oil and the potatoes, two tablespoons of salt and smoked sweet pepper, black pepper, wrap everything and bake for 1h30 hours, stirring them from time to time. For rice, put a drizzle of olive oil in a clay pot and fry the chopped onion and garlic with a bay leaf. Season with salt and ground black pepper.
