The Best Onion Dolma (Sarma) Recipe – Stuffed Onions Done Right!

Recipe: 4 medium onions 1 lb ground beef or lamb 1/2 cup rice 2 Tb pepper paste 2 Tb tomato paste 2 tsp salt 1 tsp pepper 1/2 tsp all spice 1/4 cup chopped parsley 1/4 cup chopped mint 1/2 cup tomato sauce or puree 1 lemon juiced . Peel the outer layer of the onions. Cut a slice halfway through from tip to stem. Place it into salted boiling water for 10-12min. Remove and shock in ice water. Carefully peel each layer of the onion and set aside. In a bowl add beef, rice, pepper paste, tomato paste, salt, pepper,all spice, parsley and mint in a bowl and mix. Take a heaping tablespoon of the mixture and place it at the bottom of each onion petal and roll it tightly, continue until you are out of filling. In a large pan place all the dolma seam side down fitting snug. Top with a little olive oil, tomato sauce and a cup of water. (You want the water about halfway up the onions) bring to a simmer, cover and cook for about 45min or until the rice is fully cooked. .
