Don't miss this recipe because it's monumental. Ingredients: 1 cup of rice = 200g = 9 tablespoons 1 liter of milk 1 can of coconut milk (400ml) 1/2 cup of shredded coconut = 50g = 5 tablespoons 1 cup of sugar = 220g = 12 tablespoons, or sugar to taste 2 cups of water and a pinch of salt to cook the rice 1 cinnamon stick Preparation: Cook the rice in the 2 cups of water and a pinch of salt, with the pot uncovered and on low heat. Cooking time varies from 10 to 15 minutes or so. Set aside. Heat the milk in another larger saucepan and add the cinnamon stick. Let it boil slightly, then add the sugar and let it dissolve. Add the can of coconut milk and bring to a boil, stirring slightly. Remove the cinnamon stick and add the shredded coconut. Taste the mixture, and if you feel it lacks sugar, you can add a little more until you reach your desired consistency. Add the cooked rice, reduce the heat to low, and let it cook, stirring constantly, for about 30 minutes, or until you feel it has the creaminess and moisture you desire. Once the rice is ready, remove from heat and place in a large or individual mold. Garnish with cinnamon if you like.
