Prepare Sugar Syrup: In a pan, combine the sugar and water. Heat the mixture until it reaches a perfect single-string (ek taar) consistency. 2. Flavoring: Add the crushed cardamom, saffron strings, and a pinch of yellow food color to the syrup. Mix thoroughly to release the beautiful aroma and vibrant color. 3. Cool & Mix Mawa: Turn off the gas flame and allow the syrup to cool down slightly. Once it's warm, crumble and add the Mawa (khoya), mixing it vigorously until no lumps remain and the mixture is smooth. 4. Add Coconut: Add the desiccated coconut powder into the mawa-syrup mixture and combine well until everything comes together. 5. Finishing Touch: Add pure ghee and mix it well to give the barfi a rich flavor. 6. Set & Shape: Transfer the mixture onto a silicone sheet or butter paper and press/knead it gently while warm to release the natural oils and create a beautiful professional shine. 7. Cut & Serve: Spread the mixture evenly into a greased mithai tray. Allow it to set completely, then cut it into clean square pieces.
