Wool Roll Bread This Bread Recipe is an adaptation of the Bakpao recipe which can be found here: • Bakpao Empuk Tanpa Tepung Tangmien Anti Gagal Ingredients 300 gr or about 20 tablespoons of Pastry Flour; 15 gr or about 1 tablespoon Tapioca Flour/Starch/Cassava Starch; 70 gr or about 3 ½ tablespoons Granulated Sugar, or Refined Sugar; 2 gr or about ½ teaspoon Baking Soda; 4 gr or about 1 tsp Instant Yeast; About 170 ml of water or about ¾ glass @ 200 ml, replaceable with milk; 20 gr or about 1 tablespoon of shortening, replaceable with Margarine or any butter. Ingredient for The Filling Enough Jam; Raisins to taste; DCC Chocolate, or Jimmies, just to taste. Additional Note For even more economical version, you can use a milk solution (Milk + Water), or powdered milk dissolved in water, or you can simply use plain water. If you add 1 egg, then the liquid dose is reduced by 50 ml. So, the total liquid milk or water used is around 120 ml. The use of Pastry Flour is a must if we mix the dough by hand, without a mixer. If you want to use a mixer, you can replace Pastry Flour with Bread flour, so that the bread expands better. The dosage of the liquid ingredient also needs to be adjusted. A Bread flour tends to need more water, so if you feel the dough is not flexible, the water dose can be added by about 10 ml to 20 ml from the original dose. If you want to add salt to get a better taste of the bread, you should only add a little, which is about 1-2 grams. If you use too much salt, it will affect the texture of the bread. Add salt right when adding the butter/margarine. The function of tapioca flour is to keep the texture of the bread firm when cold. But it’s fine if you just skip it out, though. It’s all up to you. For the use of shortening is best to be used when we want to make the bread plain white, so that the bread becomes pure white. However, if you want to color the bread, you can replace the shortening with margarine or any butter. For a smoother result, you can mix it with plain butter or BOS (butter substitute) or full of regular butter, (sure this one is better). The use of baking soda is not recommended to be replaced with baking powder, baking powder will affect the color of the bread become looks dimmer and the bread will be less expanded. Baking powder is not heat resistant and less effective in adding air to the bread. Yes, you can bake the bread in the oven. Bake at high temperature, which is at the temperature range of 180-200°C (depends on each oven). Bake for about 20 to 25 minutes depending on each oven until the surface of the bread turns golden brown.
