This traditional Persian Fesenjan is made with smoked chicken, fresh walnuts, pomegranate molasses, and rice, all prepared during a peaceful day of simple village life in Iran. I begin by cleaning the chicken and smoking it slowly over a wood fire. Then I crack and grind fresh walnuts, cook the rich walnut and pomegranate sauce, and add the smoked chicken to the Fesenjan. While the rain falls over the village, I also prepare rice and a fresh salad before serving this traditional Iranian meal inside our rural home.
