Burgers cooked on the Weber Electric Pulse 2000, Charcoal 57cm Mastertouch & the Gas Spirit II
This video features, as usual, Richard Holden, one of the UKs top BBQ chefs, and Ian Hodgett, from our own Barbecue Shop here at Hayes Garden World. They are cooking identical burgers on 3 different Weber BBQs to compare the results and hopefully help anyone who can't choose which fuel type BBQ to opt for. The BBQs are the 57cm charcoal MasterTouch, the new gas Spirit II E-310 and the new electric Pulse 2000. The fuel used on the MasterTouch was lumpwood charcoal as the burgers were only thin pieces of meat they did not need the long cook time of the briquettes. Briquettes will cook for up to about 3 hours whereas the lumpwood only has an approximate 45 minute burn time. The MasterTouch was set up 70/30 withfuel over 70% and no fuel in the rest of the bowl. The Spirit was similarly set up with 2 burners on and one off, the Pulse had one element on high and one low so all three BBQs had an indirect area if the burgers charred too much on the outside before being cooked in the centre. All the grills were heated to 250C. The burgers were placed over the direct heat areas and cooked for 2 - 3 minutes each side and taken off when the core temperature reached 75C. The grills were given a light spray of Weber Non-stick Spray Oil to help them release more easily. All the burgers cooked in the same time. The cooked burgers were assembled on buns with lettuce, tomato and cheese and 3 with sciraca and the remaining 3 with tomato ketchup. In the taste test the Pulse and MasterTouch both had a slightly smokier flavour than the gas Spirit, but you would expect this from the lumpwood. The Pulse compared very favourably and would be a fantastic BBQ for anyone living in an apartment where live fire is banned.
