Kundapura Shetty Lunch Home Chicken Ghee Roast Kundapura's Shetty Lunch Home, the restaurant that invented the famous Ghee Roast.Ghee roast was one of the most iconic dishes over 50 years ago.The authentic taste & aroma has been carried by the generations of the Shetty family.The recipe is a closely guarded secret of the shetty family ! The recipe that I will be sharing here, is my take on the most favourite finger-licking delightful dish 😋 and I am sure, it is goin to taste the same as the One at Shetty Lunch Home 🤪 Ghee Roast is the masala that is used to prepare a range of vegetarian and non-vegetarian dishes which include Mushroom Ghee Roast, Paneer Ghee Roast, Chicken Ghee Roast and Prawn Ghee Roast. The best combination for ghee roast is offcourse our very own Neer Dosa. But Can also be had with chapatis or bread. Detailed Video: • Kundapura Shetty Lunch Home Chicken Ghee R... Stpe 1.Soaking: 1.Soak 10-12 Byadige Red chillies in hot water for atleast 30 mins 2.Soak 5-6 cashews in water. Step 2: Ghee Roast Masala Paste: Ingredients: ¼ cup coriander seeds ½ tsp jeera 6-10 peppercorns ¼ tsp mustard seeds ⅛ tsp methi seeds Method: Roast all the ingredients. Cool & grind to smooth powder. Ingredients: 5-6 Garlic pods 1 tsp ghee soaked 5-6 cashews from step 1 1 tsp tamarind paste 1.5 tsp powdered jaggery 1.5 tsp coconut powder( or you can use dessicated coconut. Else can use fresh coconut) Method: 1.Roast the garlic in ghee & transfer to mixie jar. 2.Grind all the above Ingredients along with previously powdered spices adding water. This is the ghee roast masala paste. Step 3:Chicken Marination: Ingredients: 3 tsp hung curd ¼ tsp turmeric 1 tsp kashmiri red chilli powder salt 600 gms boneless chicken (can use bone-in too) 1 tsp ghee roast masala paste ½ lemon Method: Marinate chicken with the above ingredients for 30mins. Step 4:Ghee Roast Marinated Chicken Partially: Shallow fry the chicken in 4-6 tsp ghee until half cooked. We will be further cooking the chicken in the masala.. Make sure not to overcook. This step is necessary since frying locks the chicken from oozing out water in the gravy thus maintaining the perfect texture of the ghee roast. Step 5: Ghee Roast tempering Ingredients: few curry leaves 6-10 tsp ghee(varies) Salt to taste Method: 1.Add the prepared ghee roast masala paste in same ghee in which chicken was roasted & saute until the ghee seperates from the masala & raw smell goes and the colour changes to bright red.Add residual water & cook. 2.Add ghee at regular intervals & stir continuously at low flame to avoid burning. 3.Then add the half cooked chicken & roast it until chicken is fully cooked and desired consistency is achieved.
