The breed decision determines almost everything downstream — how many eggs per year, what color, how much feed the flock consumes, and how well the birds tolerate winter cold or summer heat. Getting this choice wrong is the single most common mistake new small-farm producers make. Leghorns lay the most eggs of any standard chicken breed — up to 300 white eggs per year — but they're flighty, skittish, and poorly suited to cold climates. Rhode Island Reds lay slightly fewer brown eggs annually but tolerate harsh winters, free-range confidently, and rarely go broody, which keeps egg production consistent instead of pausing for weeks while a hen tries to hatch a clutch. Modern hybrid layers, sold under names like Golden Comet or ISA Brown, were engineered specifically for commercial and backyard egg production. They begin laying at 16 to 18 weeks instead of the 20 to 24 weeks typical of heritage breeds, and they sustain higher output through their first two laying years. The tradeoff is a shorter productive lifespan and less resistance to disease compared to older, slower-developing breeds. Climate should drive the final decision more than any chart of annual egg counts. A heavy-bodied, small-combed breed like the Wyandotte or Chantecler resists frostbite in northern winters. A heat-tolerant breed like the Leghorn or Easter Egger performs better where summer humidity would otherwise crash egg production in heavier breeds.
