How to Make Cookies Using Freshly Milled Einkorn Flour using The Wonder Mill. Ancient Grain Cookies

Brenda shows how to make two types of cookies using freshly-ground Einkorn flour....Chocolate Chip and Molasses. She shows how to use her Wonder Mill to grind the grain. Recipe for Chocolate Chip Cookie 8 Tbsp. unsalted butter, softened 3/4 Cup brown sugar 1/2 tsp. fine sea salt 1/2 tsp. baking soda 1 large egg 1/2 tsp pure vanilla extract 1/2 Cup chocolate chips 2 1/2 cups whole grain Einkorn flour Instructions. 1. Preheat oven to 350 2. Cream the butter, sugar, salt and baking soda well 3. Add egg and vanilla to creamed mixture 4. Mix in chocolate chips until well combined 5. Add flour and mix until fully incorporated 6. Drop by tablespoonfuls onto ungreased cookie sheet about 1 inch apart 7. Bake for 10 min. 8. Let the cookies cool for 5 minutes on the baking tray and then transfer to a cooking rack. 9. Cookies can be stored in an airtight container for up to 3 days. Recipe for Helthier Whole Grain Molasses Cookies 2/3 Cup oliv oil. (extra light) 1 cup sugar 1/4 cup molasses 1 large egg 2 cups Einkorn flour 2 tsp. baking soda 1 1/2 tsp. ground cinnamon 1 tsp. ground ginger 1/2 tsp. ground cloves 1/4 tsp. ground nutmeg 1/2 tsp. sea salt cane sugar for rolling Instructions 1. Preheat oven to 350 2. In large bowl, add the oil, sugar, egg and molasses and beat until combined. Add the flour, baking soda, salt, cinnamon, ginger, cloves and nutmeg and stir until combined. 3. Roll the batter into 1-inch balls and then roll the balls in cane sugar. Place the balls on a lined cookie sheet spaced two inches apart. 4.
