Wood-fired cooking on a Fire Cage (Argentine Asado BBQ)
Have you ever heard of an Asado? The Spanish word Asado refers to the barbecue technique in various South American countries, especially Argentina and Uruguay where it is also a traditional event. An Asado usually consists of meat and vegetables cooked on a grill called a parrilla, or an open fire (whereby the meat is skewered on a metal frame and is roasted by placing it next to a slow-burning fire). In this video, we demonstrate how to prepare a very basic Asado using a "Fire Cage" (fabricated by Savage BBQ UK) and cooking over our authentic Namibian braai wood. There is a bit of an art to cooking over a wood fire and selecting the right hardwood is only the first step.
