Friends, this time I'm going to make a Gorontalo specialty: Ayam Bakar Iloni, a chicken marinated in spices mixed with coconut milk and grilled, creating a spicy, savory, and authentic flavor. ILONI GRILLED CHICKEN Recipe by Rudy Choirudin Ingredients 1: • 1 (700 grams) rooster, cut into 8 pieces and sliced • 4 tablespoons cooking oil, for sautéing • 5 shallots, chopped • 1 pandan leaf, torn and tied • 5 kaffir lime leaves, torn • 1 stalk lemongrass, split and bruised • 350 ml thick coconut milk Ingredients 2 (Ground Spices): • 5 bird's eye chilies • 3 curly chilies, chopped • 5 cloves garlic • 2 cm ginger • 1/2 teaspoon Desaku turmeric powder • 1 teaspoon Ladaku pepper powder • 1 teaspoon salt • 50 ml Thick Coconut Milk Cooking Instructions: 1. Puree the cayenne pepper, curly chili, garlic, ginger, Desaku Turmeric Powder, Ladaku Pepper Powder, salt, and 50 ml coconut milk. Set aside. 2. Sauté the shallots until golden brown. Add the ground spices (ingredient 2), pandan leaves, lime leaves, and lemongrass. Sauté again until fragrant and cooked through. 3. Add the chicken and cook until the chicken changes color. 4. Add 350 ml coconut milk and cook the chicken over low heat until cooked through (approximately 10 minutes). 5. Grill the chicken until fragrant, turning it occasionally and dipping it in the marinade. 6. Place the grilled chicken on a serving plate and drizzle with the remaining marinade. 7.
