Carbohydrates (starch) are converted to glucose by amylase. Proteins are converted to amino acids by pepsin. Fats are converted to fatty acids and monoglycerides by lipase. Then, they are absorbed nicely by the villi of the small intestine! I know it's not that simple, but it's complicated, but the human body is so complicated that I can't say that.
