For a large cake with a 26 cm diameter, you should double the ingredients. ▶️ For the sponge cake base: 3 medium eggs 1 pinch of salt 80 g caster sugar 1/2 tbsp vanilla sugar or the seeds from half a vanilla bean 120 g cake flour* (plain all-purpose flour, type 405, works too) 1/2 tsp cream of tartar baking powder ▶️ For preparation, see the video above. Please prepare in a 20 cm springform pan the day before. For a large cake, double the recipe and use a 26 cm pan.
