I Beat Dark Souls 1 Without Realizing You Could Level Up

I didn't realize you could level up in Dark Souls 1 all the way until I beat the game. This is a full Soul Level 1 run, from the very first bonfire all the way to Gwyn's fiery twink ass. No leveling means a badly limited weapon pool, no extra health, and by the back half of the game just about anything can one shot me.
