This confirms to me that it's probably not very popular, even though we eat a lot of zucchini in A Coruña (I guess), or like everywhere else. In the end, seeing the recipe inspired me and helped me use up some zucchini I had in the fridge, which I also stuffed with what I had on hand. The important thing in a dish for everyday cooking is to adapt our pantry and not run to the supermarket as if the world were ending. INGREDIENTS 3 medium zucchini ½ onion 50g finely chopped cooked ham 40g finely chopped Serrano ham 40g grated Parmesan cheese (I used Galmesan) 120g grated cream cheese (mine was ARZÚA ULLOA) 1 finely chopped tomato 2 tablespoons of tomato sauce Pinch of oregano Pinch of nutmeg A pinch of chopped paprika or red chili (optional) Salt and black pepper Extra virgin olive oil To finish: 120g grated cream cheese (mine was Tetilla) Chopped parsley Side dish: Lamb's lettuce and cherry tomato salad.
