Fava Bean Soup - delicious and healthy - a southern italian classic!
This Fava bean soup is my version of a Southern Italian classic! It is so easy to make - only uses a few ingredients and yet is absolutely delicious!! Furthermore, fava beans are loaded with vitamins and antioxidants - this soup is super healthy and tastes amazing. Such a winning combination - sure hope you enjoy this recipe and give it a try :) Ivo’s Special “Fava Bean Soup” – Southern Italy Style Ingredients • 750 grams (26 oz) fava beans (typically frozen or canned, or fresh) • 2 ¾ liters (quarts) of chicken or vegetable broth (minimum 2 liters/quarts) (If using only 2 liters/quarts, the soup will still be very good, but it will be very thick) • 1 garlic clove minced. • 1 medium sweet onion sliced thin and diced. • 375 grams (13 oz) potatoes, cubed (yellow flesh or red potatoes preferred, or basic white potato) • ½ head of escarole lettuce (or endive) chopped into small bits • Extra Virgin Olive Oil (EVOO) • Salt to taste • Optional black pepper or Tabasco sauce Process • In a pot, add 5 – 6 TBSP EVOO and the onion and garlic. Sauté 3 – 5 minutes • Then add the potato and the fava beans. Toss to coat with the onion, garlic, and EVOO and sauté for 3 – 5 minutes. • Now add the broth, with the lid on, bring to a boil and let boil with lid on for 20 – 30 minutes • Meanwhile, in a separate pan, add 5 TBSP EVOO and the chopped escarole. Begin to sauté this until it shrinks in size and becomes very soft and tender (typically takes about 10 minutes). Add salt to taste and set aside. • Once the 20 – 30 minute boil is up, turn off the stove and with an emersion blender, blend until everything is blended together to a nice smooth consistency, with no lumps. Taste for salt and add salt to taste (Remember, your broth may already contain salt) • Add the escarole to the soup and just stir it in • Soup is now ready – enjoy as is, or add optional black pepper or tobacco sauce 😊 My Kitchen Gear Here are a few things I mentioned in the video.
