Mix Biga ingredients in a tub, make sure all flour is absorbed until the dough is flakey, dry and shaggy. It should be about 20°c in temp. Leave at room temp for 16-20 hours. 2️⃣ To Make the final Dough (Refresh) In a spiral mixer, add the biga, flour and half of the ice cold water. Mix until all the biga and ingredients come together. The slowly add the rest of the water in stages. Once the dough is smooth and all together, add the salt and oil. Dough temp should be about 24°c 3️⃣ Remove from the mixer with wet hands as it will be sticky, stretch & fold 3 times every 30 minutes. 4️⃣ Divide into 280g dough balls, place in a dough tray and rest for 2-3 hours until the balls have doubled in size.
