You can be rich or poor, live in the countryside or the city, drink whiskey or wine, listen to Alfa or Beethoven, WE ALL LIKE THIS DISH. PERIOD. So, for those who don't know what La Bandera Dominicana is, here's the explanation: La Bandera Dominicana is a typical dish from the Dominican Republic consisting of rice, beans, meat, and salad with their respective dressing. When we're feeling good, we also include an arepita (small corn tortilla), avocado, and if the cook is respectful, they allow a little bit of con con to form at the bottom of the rice. This dish, which at its best has eight (8) ingredients, is what we typically eat at noon on a normal workday. So, Paulette shows us how she prepares this dish, but in the way she likes it. You may find some slight variations on this preparation, but in the end, we're talking about the same dish. To go into a little detail, here's a rundown of all the ingredients. The Pollo Guisado (Stewed Chicken) was prepared with burnt sugar, tomato paste, garlic, bell pepper, cubanela pepper, vinegar, Worcestershire sauce, and cilantro. The Habichuelas Guisadas (Stewed Beans) were made with boiled red beans, sautéed cubanela pepper, gustoso pepper, white onion, garlic, pork loin bone, pumpkin, oregano, ancho cilantro, tomato paste, and cilantro. The Arroz Blanco (White Rice) was prepared with grains and using the technique to obtain the corresponding concón (concon). The Dominican Green Salad was prepared with cabbage, tomato, and cucumber, along with the usual vinaigrette made with olive oil, vinegar, salt, grated raw garlic, salt, and oregano. The Yucca Arepita was prepared with grated yuca, heavy cream, sugar, salt, and anise. To top it off, a creamy avocado with salt and olive oil. Gentlemen. This dish was fucking awesome.
