RICA-RICA SNAPPER RECIPE Ingredients: 1 kg white snapper 5 cloves garlic 5 cloves garlic 30 bird's eye chilies 1 ounce red chilies 2 tomatoes 1 lime 3 kaffir lime leaves 1 stalk lemongrass 1 piece of brown sugar 1 tablespoon salt 1 tablespoon mushroom stock 1 teaspoon ground coriander 1 teaspoon ground pepper 2 packets of Sajiku seasoning flour Basil leaves to taste 200 ml water Methods: 1. Sprinkle the fish pieces with Sajiku seasoning flour and spread evenly. 2. Sprinkle a second time and spread evenly again, ensuring the flour coats the fish. 3. Heat a frying pan and add a generous amount of cooking oil. 4. Fry the fish until cooked through. 5. Remove the lime leaves and thinly slice the chilies and set aside. 6. Coarsely blend the shallots, garlic, tomatoes, and bird's eye chilies (you can also pound them). 7. Remove and drain. 8. Heat a frying pan with cooking oil. 9. Add the blended spices and sauté until the water evaporates. 10. Add the crushed lemongrass and sliced lime leaves and sauté until fragrant. 11. Add the sliced red chilies. 12. Pour in the water and stir well. 13. Add the salt, mushroom stock, ground coriander, ground pepper, and lime juice. 14. Add the brown sugar. 15. Sprinkle with the basil leaves. 16.
