Back in Barsha to hunt down dishes most people never think to order, from Moroccan tanjia to Syrian kibbeh and date pizza in Dubai now. I’m back in Barsha because the last time I was here, I didn’t even make a dent on one street. This time I’m walking a little further through the neighbourhood to find uncommon dishes, the kind you might never think to order because you didn’t know they existed in that culture. So instead of Moroccan tagine, I’m eating slow-cooked tanjia with harissa and Moroccan bread. Instead of Iranian kebabs, I’m ordering tahchin, a saffron rice and chicken cake with that glorious crispy rice crust.
