Ingredients (in whatever proportions you prefer; I recommend adjusting the amounts gradually) ~Small or medium unripe eggplant (it should have a shiny, firm skin) ~Garlic ~Lemon ~Salt and pepper ~Tahini: This is a paste made from toasted and ground sesame seeds and extra virgin olive oil. ~Plain, unsweetened yogurt ~For garnish: olive oil, paprika, and chopped fresh parsley. ____________________ To remove the eggplant's natural bitterness: Chop or slice the eggplant and cover it with salt. Let it sit for half an hour until it releases its juices, which contain astringent compounds. Rinse thoroughly with water. You can also use a solution of water and vinegar instead of salt to cover the pieces and follow the same steps. However, the salt method is recommended. Once "bled" and dried, it can be grilled or pan-fried, or baked with a little olive oil; each method gives it different but equally delicious flavors!
