Place tomatoes, onion quarters, jalapeño, and garlic cloves on a sheet pan. Broil until charred and blistered, about 8–10 minutes, turning once. Garlic will likely be done sooner—remove if it browns too quickly. Blend: Peel the garlic and add to a blender with the roasted tomatoes, onion, and jalapeño. Add cilantro, cumin, onion salt, salt, pepper, lime juice, and chicken bouillon cube. Blend until smooth or slightly chunky, depending on your preference. Adjust: Taste and adjust seasoning—more lime for brightness, more salt for depth, or an extra jalapeño for heat. Chill: Transfer salsa to a jar or bowl, cover, and refrigerate for at least 30 minutes before serving.
