It was delicious. Ingredients [Dough 1] 50g strong flour 3g dry yeast 40ml lukewarm milk (microwave at 600W for 20 seconds for best results) [Dough 2] 50g unsalted butter (room temperature) 20g granulated sugar 25g beaten egg (about half of one egg) 1 teaspoon cinnamon 6 shakes of nutmeg 2g salt 100g strong flour 40g almond powder 30g mixed nuts Dra 150g mixed fruit 2 teaspoons white wine [Finishing] 40g melted butter Plenty of powdered sugar Directions [1] Finely chop 30g mixed nuts and mix with 150g dried fruit and 2 teaspoons white wine. Set 50g butter aside to return to room temperature. Prepare 25g beaten egg. [2] In a bowl, combine 50g bread flour, 3g dry yeast, and 40ml milk (microwaved for 20 seconds). Mix. Once combined, dust a surface with flour and knead the dough. [3] When the dough comes together and becomes sticky, form it into a ball, place it in a bowl, cover with plastic wrap, and let it rise at 40°C for 40 minutes. [4] In a bowl, mix 50g of room temperature butter and 20g of granulated sugar. Add 25g of egg in three batches, then add 40g of almond flour, 1 teaspoon of cinnamon, 6 shakes of nutmeg, and 2g of salt and mix well. Add 100g of bread flour in three batches and mix. [5] When the dough becomes sandy, sprinkle flour on the surface and knead vigorously. Place the dough in a bowl and cover with plastic wrap until it's finished rising. [6] Once the dough has finished rising, sprinkle flour on the work surface and knead the bread dough and cookie dough together until the colors are completely mixed. [7] Roll the dough out into a round shape and vigorously fold in the dried fruit and mixed nuts. Once mixed, knead the dough a few times. Divide the dough in half, cover with plastic wrap, and let it sit for 20 minutes. [8] Roll the dough into an oval shape (seriously about the size and shape of a takosen). Fold it from the back to the center, then fold it from the front to the center, then fold it again from the back, pressing down to form a uniform shape. [9] Place it on a baking sheet lined with parchment paper and let it rise at 40°C for 20 minutes. Meanwhile, preheat the oven to 180°C. [10] Bake in a 180°C oven for 30 minutes. While baking, prepare 40g of melted butter. Immediately after baking, brush the bottom of the dough with melted butter while it's still warm, and chill thoroughly in the refrigerator. (This took about an hour to cool.) [FINAL] Finally, spread a large sheet of plastic wrap, sprinkle powdered sugar in the center, and then sprinkle a lethal amount of powdered sugar on the baked part. Wrap it in plastic wrap, and leave it in the refrigerator for two days. It's done! (One day would probably be fine, but I've chosen two.) This will keep for a month. Don't rush it. Eat it slowly.
