Hi berry sweet bakers. Today we’re baking a magical Strawberry Surprise Cake. It looks sweet on the outside, but inside there’s a colorful candy surprise just waiting to tumble out! Come along on a new baking adventure on The Berry Best Baking Show! Strawberry Shortcake dishes out her berry best recipes, from cakes to cookies to tarts and yes, even her very own iconic strawberry shortcake. Follow along at home with easy-to-follow measurements and instructions, and bake the magic happen! RECIPE Cake Ingredients ● 2 whole eggs ● 1 cup sour cream ● 2 sticks unsalted butter, melted ● 1 cup water ● 2 cups white sugar ● 2 cups all-purpose flour ● 2 teaspoons baking soda ● 1 teaspoon salt ● 2 teaspoons vanilla extract ● 2–3 drops pink food coloring Berry important first step! Ask a grown-up to help set the oven to 325°F and move the rack to the middle. Let’s Make the Cake Batter 1. Mix the Dry Stuff In a small bowl, stir together the flour, baking soda, and salt. Set it aside for later. 2. Make It Fluffy In a large bowl, beat the eggs and sugar with a hand mixer until light, fluffy, and pale yellow. This takes about 2–3 minutes. 3. Add the Creamy Goodness Mix in the sour cream and vanilla until smooth. Slowly add the melted butter and mix until everything is blended together. Scrape the sides of the bowl so no batter gets left behind. 4. Bring It All Together Add half of the flour mixture and mix just until combined. Pour in the water and mix again. Add the rest of the flour mixture and mix until smooth, scraping the bowl one last time. 5. Make It Pink and Swirly Divide the batter evenly into two bowls. Add pink food coloring to one bowl and mix until it turns Strawberry Shortcake pink. 6. Pan Prep Grease three 6-inch round cake pans. Line the bottoms with parchment paper. 7. Create the Surprise Swirl Line up the cake pans. Scoop one scoop of pink batter into each pan, then one scoop of vanilla batter. Keep alternating until all the batter is used. Try to keep each pan even. Use a butter knife or straw to gently swirl the colors just a little. 8. Bake Time Bake for about 30 minutes. Ask a grown-up to help check with a toothpick. If it comes out clean, the cakes are ready. 9. Cool the Cakes Let cakes cool in the pans for 15 minutes, then turn them out onto a cooling rack until completely cool. Strawberry Buttercream Ingredients ● 2 sticks unsalted butter, softened ● 3 cups powdered sugar ● Pinch of salt ● 2–4 tablespoons heavy cream ● 2 teaspoons vanilla extract ● 1/2 cup freeze-dried strawberries, ground into powder Let’s Make Strawberry Buttercream 1. Beat the Butter Beat the butter until smooth and creamy. 2. Sweeten It Up Add powdered sugar and salt. Mix slowly until combined, then beat until smooth. 3. Make It Fluffy Add heavy cream and vanilla. Beat on medium-high until light and fluffy. 4. Add the Strawberry Magic Stir in strawberry powder a little at a time until it tastes berry perfect. Spoon frosting into a piping bag or keep it ready for spreading. The Candy Surprise You’ll need about 1 cup of colorful, berry-flavored candies. Think bright, fun, and fruity. Strawberry Shortcake loves lots of color. 1. Make the Hidden Hole Use a small round cookie cutter or cup to cut a hole in the center of two cake layers. Leave the third cake whole. This will be the top. 2. Stack and Frost Place the first hole cake on a plate. Spread a thick layer of strawberry buttercream on top. Add the second hole cake and frost again. 3. Fill with Candy Pour all the fruity candies into the hole, right up to the top. This is the surprise part. 4. Seal the Secret Place the whole cake layer on top. Press gently. 5. Frost the Outside Frost the sides and top of the cake. Make it smooth or swirly. Save some frosting for fun decorations on top. When you cut into Strawberry’s Surprise Cake, the candy spills out like magic from Strawberry Shortcake’s kitchen.
