My fist experience tasting co-fermented coffee. This coffee was from Sparrow.com and is considered a speciality experimental coffee. It was fermented with pieces of watermelon. According to Sparrow's website: "This a one of the first experimental lots we have received from our long standing partner in Nariño. With the first fermentation having fresh watermelon pieces in the tank along with the coffee, this experiment worked like a charm! From opening the bag you will smell the fresh watermelon and it will only get stronger as you brew. The initial flavor of the sip is sweet, almost candy like, moving quickly into juicy watermelon so fresh you can taste hints of the rind. With undertones of cashew and walnut this full bodied coffee is not to be missed. It even makes a great fruity cold brew! " My initial tasting of this as a clever dripper brewed coffee was "this is a good cup!" I later had some other thoughts, but think if I let the coffee rest, it will improve considerably. I was thinking 8 more days, but I have also heard some people go considerably longer, as in up to 5 weeks! It's definitely a coffee worth trying, if you like a light roast and if you like a bit of experimentation on your tastebuds. Did I say that right?
