Cómo preparar Patacones -Tostones- crujientes y deliciosos

I present my version of this delicious, proudly Latin recipe. Crispy patacones or tostones accompanied by a delicious guacamole, just like Marissa's everyday recipe. However, you can also serve them with refried beans, cheese, pico de gallo, and many more toppings! To prepare 12 large patacones, you'll need: 🥒4 green plantains 🥒1 1/2 teaspoons of salt, or more to taste 🧂1 teaspoon of yellow "La Estrella" pepper 🧂Black pepper to taste For the Guacamole: 🥑2 medium avocados 🥑1/2 small onion 🥑1/2 small green tomato 🧅1 teaspoon of mayonnaise 🧅3 sprigs of cilantro (coriander) 🧅1/2 lemon 🌶1/4 teaspoon of mustard 🌶Jalapeño pepper to taste 🌶Salt to taste Process: 1. Peel and remove any stains from the patacones. Cut them into chunks according to your preference, wash well, and drain. Once drained, add the seasonings to taste: salt, black pepper, and yellow pepper. Stir well to ensure the plantains are well seasoned. Set aside for 10 minutes to allow the flavors to penetrate. 2. Meanwhile, prepare the guacamole. For the guacamole, chop the onion and let it cook in warm water for a few minutes. Then add ice cubes to give the onion a crunchy texture. Finely chop the tomato, cilantro, and jalapeño pepper and add them to the onion along with the avocados and the rest of the seasonings. Stir well without mashing the avocado completely, to achieve a crunchy texture. 3. In a frying pan with oil, fry the plantains until golden brown on both sides. Remove them from the heat and mash them with a tortilla press or a board to press them down. 4. Once flattened, fry them again in enough oil until they are crispy and tasty.
