砂鍋粉絲大蝦 Prawn and Vermicelli Casserole **字幕 CC Eng. Sub**

🟢材料: 海蝦 600克 鮮冬菇 50克 粉絲 50克 薑 10克 蒜頭 2瓣 紅蔥頭 1個 蔥 1 條 雞湯 250毫升 糖 ½茶匙 蠔油、魚露、鹽、胡椒粉、粟粉/澱粉 適量 🟢做法: 1️⃣ 將薑、蒜頭、紅蔥頭、蔥切碎備用,粉絲洗淨,等15分鐘軟身略為剪開備用。 2️⃣ 將大蝦解凍,去腳去腸,洗淨吸乾水,撒上少許鹽和胡椒粉,薄薄撒上粟粉/澱粉。 3️⃣ 熱鍋下油,大火把蝦每邊煎30秒,盛出備用。 4️⃣ 用煎蝦的鍋爆香切碎的薑、蒜頭、紅蔥頭,加入冬菇爆炒。 5️⃣ 加入雞湯250毫升,放½茶匙糖,適量蠔油和魚露,加入粉絲,把全部材料轉入砂鍋中,把大蝦也加入砂鍋中,蓋鍋蓋中火煮3分鐘,出鍋撒上蔥花即可。 🟢Ingredients: Prawns - 600g Fresh shiitake mushrooms - 50g Vermicelli - 50g Ginger - 10g Garlic - 2 cloves Shallot - 1 bulb Green onion - 1 stalk Chicken broth - 250ml Sugar - ½ teaspoon Oyster sauce, fish sauce, salt, white pepper powder, cornstarch - as needed 🟢Cooking Directions: 1️⃣ Chop the ginger, garlic, shallot, and spring onion set them aside. Wash the vermicelli and let it sit for 15 minutes until softened, cut them into shorter strands. 2️⃣ Thaw the prawns, remove the feet and intestine. Rinse and pat dry with a paper towel. Season with a pinch of salt, white pepper powder, and cornstarch. 3️⃣ Heat some oil in a pan over high heat. Pan-fry the prawns for 30 seconds on each side. Remove from the pan and set aside. 4️⃣ In the same pan, sauté the chopped ginger, garlic, and shallot until fragrant. Add the shiitake mushrooms and stir-fry. 5️⃣ Pour in the chicken stock and add ½ teaspoon of sugar, a little oyster sauce and fish sauce. Add the vermicelli and transfer all the ingredients to a casserole. Add the prawns on top. Cover and simmer for 3 minutes over medium heat.
