deviled eggs and homemade avocado mayo

Its almost easter, and the price of eggs has finally come down a bit, so its looking like the perfect time to try our hand at deviled eggs. Oh also, we're gonna be making some homemade avocado mayo too. Deviled eggs: 10 eggs 1/4 cup mayonnaise 1 tbsp vinegar 1 tbsp pickle juice 1 tbsp minced onion 1 tbsp minced pickle 1 tbsp chives(finely chopped) 1/2 tsp black pepper Salt to taste Old bay to taste Sugar to taste Paprika or chili powder for garnish 1. Steam eggs for 14 minutes on high heat 2. Cool eggs in an ice bath for at least 5 minutes 3. Peel eggs under water(running water is best) 4. Slice eggs in half and gently remove yolks 5. Optionally pass egg yolks thru a sieve for a finer texture 6. Mix all ingredients together 7. Pipe mixture into egg whites using a piping bag or a ziplock(spoons also work lol) 8. Garnish with a sprinkle of something red like chili powder or paprika 9. Enjoy! Mayonnaise: 2 egg yolks 1-3 cups of oil 1 tsp dijon mustard Salt to taste 1. Whisk egg yolks until cohesive 2. Start drizzling in oil in a very thin stream about 1/8th tsp -1/4 tsp at a time. Whisk to combine completely before adding more oil 3. Add in dijon mustard after 2-3 minutes of whisking and adding oil, the mixture should be lighter in color and thickening a bit 4. When mixture is about as thick as yogurt, you can start adding in oil more generously(about 1 tbsp at a time) 5. You can stop when mayo reaches a consistency that you’re happy with(I added a total of about 1.5 cups) 6. Stir in vinegar and salt to taste 7.
