Small Hungarian Cheese Scones (Sajtos Pogácsa)
Pogácsa is a common snack is Hungary, a really nice party food which goes well with beer or wine. They are really easy to make and everyone is guaranteed to like them. We make several versions using potato, cheese or cracklings and more. The size of the Pogácsa also varies from tiny bite-size ones to a really large ones. Mine was made with farmers cheese and cheese and I prefer to cut them to smaller size. Ingredients (makes around 40-45 small pieces) 25 dkg (0,5lb) farmers cheese 25 dkg (0,5lb) grated cheese (cheddar, gouda, swiss or any type you prefer) 30 dkg (0,6lb) flour 2 egg yolks 25 dkg (0,5lb) butter 1 tsp salt 1. Put the farmers cheese in a large bowl and break it up with a fork. 2. Add the flour, salt, the cold diced butter, one egg yolk and 2/3rd of the grated cheese 3. Mix everything together with your hands and knead the dough until it's thoroughly mixed and you have a nice smooth dough. 4. Cover with cling film and refrigerate for 1 hour 5. Preheat your oven to 180C (360F) 6. After 1 hour place the dough on a well floured surface and sprinkle some flour over the dough 7. Roll it out to a 0,5 cm (0,2”) thick rectangle then fold it this way: upper half to the middle, then fold the lower part on it then the two sides on each other 8. Now, roll it out again – using more flour if needed – until you've got a ½ inch (1,2 cm) thick rectangular dough 9. Cut small rounds from the dough with a 3,5 cm (1,3”) cutter (of course you can use any size cutter you prefer) 10. Place the rounds on a non-stick baking sheet and brush them with the remaining egg yolk 11. Put a pinch of grated cheese on top of the scones then put it into the preheated oven. 12. Bake for 20-25 minutes on 180C (360F) 13. Use the leftover dough to make a second batch of Pogácsa 14. When the Pogácsa is nice and golden, take it out of the oven. You can eat it while it's still hot or wait (if you can :)) until it's room tempreture. 15.
