Today, I’m sharing one of the most loved traditional Kodava dishes — ಕಳಲೆ ಪಲ್ಯವು (Bamboo Shoot Curry) with Akki Rotti 🌿❤️ Bamboo shoots are not only delicious but are also rich in fiber, low in calories, and packed with antioxidants. They support digestion, promote gut health, and are a wonderful seasonal ingredient enjoyed across Kodagu for generations. Paired with soft, wholesome Akki Rotti, this meal is simple, nourishing, and deeply rooted in Kodava culture. Ingredients: • Fresh bamboo shoots (Kalale) • 1 medium-sized onion, finely chopped • Curry leaves • Crushed garlic • Dry red chillies • Turmeric powder • Chilli powder • Roasted jeera (cumin) powder • Salt to taste Preparation: Freshly harvested bamboo shoots have a very strong aroma and taste, so proper preparation is essential. 🌱 Chop the bamboo shoots into small pieces and soak them in water for 2 days. • Day 1: Soak for 24 hours to help remove the natural bitterness, strong odour, and unwanted compounds. • Day 2: Change the water and soak again for another 24 hours. This allows the bamboo shoots to develop a mild fermented, slightly sour flavour that makes the dish truly authentic. 💧 Remember to change the water each day. On Day 3: • Wash the soaked bamboo shoots thoroughly with clean water. • Pressure cook them with fresh water for about 2 whistles until tender. For the tempering (tadka): • Heat groundnut oil (or coconut oil). • Add mustard seeds, hing, crushed garlic, curry leaves, and dry red chillies. • Sauté until aromatic. • Add the chopped onion and cook until lightly golden. Now add the cooked bamboo shoots, salt to taste, and roasted jeera powder.
