Chuño, sabiduría alimentaria andina

Chuño is one of the most important legacies of Andean civilization. A product of potato dehydration, chuño requires the most extreme climatic conditions to become the storable and highly nutritious food it is. The enduring relevance of this food tradition is evident in the Puno highlands, where many families from communities near Lake Titicaca travel to the coldest areas during the frost season to transform their potato crops into chuño. The documentary "Chuño, Ancestral Andean Wisdom" presents the testimony of Alejandro Flores, a resident of Taquile Island, who, along with his family, travels every year to the plains of Malcomayo, in the district of Pichacani, Puno province, to produce this precious product that has maintained food security for the Andean population of the country for centuries.
