Doctor Taught 32 People This Lentil Curry in 30 Minutes

This video is a replay from one of my live cooking classes where I taught 32 people how to make this simple lentil curry in about 30 minutes. RECIPE Ingredients For the lentil stew –1 red bell pepper, diced –½ onion, diced –1 cup red lentils –1 tbsp tomato paste –½ cup fire-roasted tomatoes –4–6 cups vegetable broth (add more for thinner stew) –1 cup full-fat coconut milk Optional Quick Naan --2 cups All purpose flour –1 tsp sugar –1 tsp baking powder –1 tp salt –2 tsp olive oil –⅓ cup plant based milk –⅓ cup water Seasonings –Salt to taste –1 tbsp paprika –1–2 tsp curry powder –1 tsp onion powder –½ tsp garlic powder – ½ ginger powder –½ tsp cumin To finish –Juice of 1 lime –Fresh cilantro –Coconut yogurt (optional) –Chili crunch or chili flakes (optional) Instructions 1. In a large pot over medium heat, sauté onion and bell pepper with a pinch of salt for 3–5 minutes until softened. 2.Add tomato paste and all spices and cook for 1 minute on medium low heat to deepen flavor. Make sure enough oil so spices don’t burn 3. Add fire roasted tomatoes and cook down additional 5 minutes until deep red color. Stir occasionally to make sure it doesn't stick. 4. Stir in lentils plus at least 4 cups of broth. Bring to a rolling boil then turn down low and cover pot and allow to simmer for 20 -25 minutes. Make the Naan (optional) 5. Whisk flour, sugar, baking powder and salt together in large bowl. Stir in olive oil and plant based milk stirring with a spatula. Add a little water at a time until dough is sticky but not wet. 6. You should be able to knead dough into a ball and let sit for 10 minutes covered in bowl 7. Cut dough into 6 roughly even parts. Then roll out with rolling pin until very thin. Place a few drops of water on top after rolling out and sprinkle of cilantro. Cook in hot cast iron pan until bubbles form before turning over 8. Can brush with vegan butter with pinch of salt and cilantro Finish the Stew 9. After simmering check your stew and stir in coconut milk 10. Add lime juice and cilantro. Taste and adjust salt as needed 11.
